    This simple, yet flavorful apple galette is made with an ultra-flaky puff pastry and will be on your table within the hour. Incredibly easy to make, this is the perfect pie recipe for any occasion.

    Quick and easy - this apple tart is assembled with a pre made puff pastry for super quick assembly. The apple pie filling cooks while the puff pastry thaws, and you'll be eating this warm and delicious puff pastry galette within the hour. It also uses very few ingredients, most of which you'll already have on hand.

    Flavorful - the apple pie filling is packed with warm spices like cinnamon, nutmeg, cloves, and allspice and a bit of brown sugar for that added sweetness. It pairs perfectly with puff pastry, and finished with an extra touch of sweet from the coarse sugar coating the pastry.

    Full of texture - the apples are soft, yet keep a toothsome bite, which pairs perfectly with the ultra-flaky puff pastry. Top it with vanilla ice cream for that creamy melt factor oozing in to every bite.

    What is a Galette?

    A galette is a rustic, free-formed pie or tart made without a dish. Typically made on a sheet pan or in a large cast iron skillet, the fillings are added to the center of the pie dough, and the edges are folded up partially to hold the fillings in.

    Galettes have all the same great tastes and qualities of pie, without all the fuss. They're perfect when you need a quick dessert, and are always a crowd pleaser.

    Ingredients

    Ingredients for apple galette.
    • Puff pastry. Using frozen, store-bought puff pastry for this recipe is perfect. If you can find a variety made with butter rather than oil, grab that one!
    • Apples. Firm, baking apples should be used.
    • Spices. Cinnamon, nutmeg, and cloves.
    • Brown sugar.
    • Lemon juice. A squeeze of lemon juice is added to help cut through the sweetness of the apples.
    • Corn starch. To help thicken the juices that release while cooking the apple pie filling.
    • Coarse sugar. To sprinkle on the puff pastry prior to baking.

    What are the Best Apples for Apple Galette?

    Granny smith apples are a classic, but other tart baking apples such as pink lady, Braeburn, or honey crisp are also the best apples to use.

    These are firm, slightly tart apples that can take to the bake time and also don't become overly sweet during the baking process.

    Substitutions and Variations

    • If you have more time on your hands, you can make a homemade rough puff pastry dough by following my very detailed recipe. You'll be amazed that you made it with your own two hands!
    • Use store-bought or homemade pie crust in place of puff pastry. Note that the bake time will need to increase by about 5-10 minutes.
    • Drizzle salted caramel on the apples before baking.
    • Add a crumb topping to the apple galette for even more texture and flavor.
    • Cut out smaller rounds of dough to make mini apple galettes.

    How to Make This Recipe

    One: Peel, core, and slice the apples, then add to a pan with sugar, spices, and lemon and cook until soft.

    Two: Stir in a cornstarch slurry until the juices thicken, then stir in vanilla and remove from the heat to cool.

    Three: Roll out a sheet of puff pastry until thin, then cut off the corners.

    Four: Add the cooled apples mounded into the center of the pastry.

    Five: Brush egg wash around the inside of the dough (this helps it stick together).

    Six: Fold the pastry upwards in sections, pressing on the seams to seal.

    Seven: Brush the outside edge with egg wash, getting the whole way down to the bottom.

    Eight: Sprinkle on a generous amount of coarse sugar, then bake until deeply golden brown. Top with vanilla ice cream and serve warm.

    Hot tip! Try not to get any egg wash on the top edges of the pastry. This will seal the pastry and will prevent the flaky layers from puffing up.

    Expert Tips

    • After trimming the puff pastry, try not to cut the edges or else you'll seal in those flaky layers.
    • Mound the apples in the center of the dough. They naturally fall during the baking process.
    • Freeze the assembled galette for about 15 minutes prior to baking for the best crust results.
    • Be sure the oven is fully preheated and extremely hot.
    • Transfer the apple galette to the bottom third of the oven for the final five minutes of baking.

    Recipe FAQs

    How do I keep my galette from getting soggy?

    First, be sure to allow the apple pie filling to thicken during the first cooking process. Second, make sure the pastry is extra cold before baking. Third, transfer the galette to the bottom third of the oven for the final 5 minutes of baking to ensure a fully baked bottom.

    How do you know when a galette is done?

    The galette is done when the pastry is a deep golden brown, you can easily move the galette on the pan without sticking, and the fruit or fillings and hot and bubbling.

    Storage

    Store the galette lightly covered with foil (allowing air to get in) at room temperature for up to three days. Reheat the galette or slices in a pre heated 425℉ oven for 5-7 minutes to re-crisp the puff pastry.

    I would not suggest freezing this recipe, as it does not hold up well.

    Apple Galette with Puff Pastry

    Ingredients
      

    • 3 large baking apples cored, peeled, and sliced ¼" thick (500g)
    • 2 teaspoons ground cinnamon
    • ¼ teaspoon ground nutmeg
    • ¼ teaspoon ground cloves
    • 2 tablespoons lemon juice freshly squeezed
    • ¼ cup light brown sugar packed (50g)
    • 1 tablespoon corn starch
    • ¼ cup water 2 fl oz
    • 1 teaspoon vanilla paste or extract
    • 1 sheet puff pastry store bought or homemade rough puff pastry
    • 1 egg whisked, for egg wash
    • coarse sugar for sprinkling (turbinado or demerara)

    Instructions
     

    • Add the apple slices to pan over medium heat and stir in the spices, lemon juice, and sugar. Heat until some of the juices release and the apples begin to soften slightly.
      3 large baking apples, 2 teaspoons ground cinnamon, ¼ teaspoon ground nutmeg, ¼ teaspoon ground cloves, 2 tablespoons lemon juice, ¼ cup light brown sugar
    • Mix together the cornstarch and water, then add to the apples and stir immediately.
      1 tablespoon corn starch, ¼ cup water
    • Once thickened, remove from the heat, stir in the vanilla, then transfer to a plate to cool for about 15 minutes, stirring every few minutes to release steam.
      1 teaspoon vanilla paste or extract
    • Preheat the oven to 400℉/205℃ and line a baking sheet with parchment paper.
    • Lightly roll out puff pastry to ⅛” thick. Use a pizza cutter or knife to cut off the tips of the corners all the way around to form a slight circle. Transfer it to the prepared pan.

    • Add the apple pie filling to the center (piling it higher in the center), leaving 2 inches around the edges.
    • Add egg wash to the insides of the pastry around the apples, then fold the edges upward in sections. Freeze the galette for 15 mins.

    • Brush egg wash onto the pastry (taking care not to get the very edges or else it can seal the layers). Sprinkle generously with coarse sugar.

    • Bake for 20-25 mins until deeply golden brown. Cool for 5 minutes, then slice & serve with ice cream or whipped cream.

    Notes
