A giant, shareable skillet cookie made with cookie butter and crushed Biscoff crumbs baked right into the dough. The edges set up perfectly while the center stays soft and fudgy. Top it with vanilla ice cream and a drizzle of warm cookie butter for the ultimate finish.
Preheat the oven to 350℉/180℃ and grease a 10” oven safe skillet.
In a large bowl, add the butter and cookie butter and microwave for 30 seconds to 1 minute until mostly melted. Add the brown sugar and whisk vigorously to combine.
½ cup unsalted butter, ⅔ cup cookie butter, 1 cup brown sugar
Add the egg, egg yolk and vanilla and whisk again.
1 large egg, 1 large egg yolk, 2 teaspoons vanilla paste or extract
Sprinkle over the flour, cinnamon, baking soda, and salt and and use a rubber spatula to fold and mix the batter together until all flour disappears.
1⅔ cup all-purpose flour, ½ teaspoon ground cinnamon, ¼ teaspoon baking soda, ½ teaspoon kosher salt
Press the batter evenly into the skillet using a rubber spatula or clean hands.
Press the cookie pieces all over the top.
½ cup biscoff cookies
Bake for 22-28 minutes until the edges are set.
Scoop out warm pieces and serve with vanilla ice cream.

If desired, heat up the leftover cookie butter until thin, then drizzle all over the baked skillet cookie before serving.Store any leftover skillet cookie covered at room temperature for up to three days. To reheat, microwave individual portions for 15-20 seconds or pop the whole skillet into a 325°F oven for about 5 minutes to warm it back through.
