Strawberry Shortcake Sponge Cake

Create the sponge cake batter.

Carefully fold in the flour, careful not to deflate the batter.

Pour the batter into a prepared spring-form pan. Do not scrape down the sides.

Bake the cake, then loosen the sponge cake from the pan.

Combine strawberries, water and sugar to create the strawberry simple syrup.

Slice the sponge cake into three even layers.

Brush the first layer with the strawberry simple syrup.

Spread on fresh whipped cream.

Add sliced strawberries.

Top with more whipped cream to secure the strawberries. Repeat with the remaining layers.

Cover the entire cake in whipped cream, then add swirls of strawberry jam to create a swirl, then slice in!
