Puff Pastry Apple Galette

Peel, core, and slice the apples, then add to a pan with sugar, spices, and lemon and cook until soft.

Stir in a cornstarch slurry until the juices thicken, then stir in vanilla and remove from the heat to cool.

Roll out a sheet of puff pastry until thin, then cut off the corners.

Add the cooled apples mounded into the center of the pastry.

Brush egg wash around the inside of the dough (this helps it stick together).

Fold the pastry upwards in sections, pressing on the seams to seal.

Brush the outside edge with egg wash, getting the whole way down to the bottom.

Sprinkle on a generous amount of coarse sugar, then bake until deeply golden brown. Top with vanilla ice cream and serve warm.
