Equipment

  • sheet pan or large cast iron skillet
  • Rolling Pin
  • Pastry brush

Ingredients

  • 1 sheet puff pastry thawed, or homemade rough puff pastry
  • 1 wheel brie cheese 16oz
  • ½ cup fig jam or preserves 170g
  • 1 egg for egg wash

Serving

  • pistachios chopped, for top
  • honey for top
  • fresh figs for top
  • fresh rosemary or thyme chopped for top and sprigs for garnish
  • crackers, bread, etc. for serving (see notes section for ideas)

Instructions

  • Preheat the oven to 400℉/205℃.
  • Roll out the puff pastry so it's only slightly thinner (keeping it mostly square)
  • Add the puff pastry to a cast iron skillet or sheet pan (line with parchment paper if you plan to transfer the brie to another serving dish), then place the wheel of brie in the center.
  • Use a butter knife to poke and turn to make holes halfway down into the brie (all over the top). This allows the jam to penetrate into the soft part of the cheese.
  • Spread the fig jam on top of the brie, then beat the egg with a splash of water and brush it along the inside of the pastry.
  • Fold the pastry upwards to enclose the brie, gently pressing on the seams to seal. Allow part of the fig jam to remain exposed.
  • Brush egg wash on the top and outside of the pastry, then bake for 25 minutes until the puff pastry is golden brown.
  • Add sliced figs, chopped pistachios, chopped rosemary, and a drizzle of honey to the top. Serve with prosciutto, crackers, sliced baguette pieces, and/or apple slices.

Notes

Stir in 1-2 tablespoons of dry red wine into the fig jam before spreading it on top of the brie for a major flavor boost.
Serving suggestions: toasted baguette slices, sliced apples, crackers, and prosciutto.
Additional toppings: walnuts, pecans, dried cranberries, bacon, and dried figs.
This appetizer is best enjoyed hot and fresh. Store any leftovers in an airtight container and reheat carefully in the microwave or in a 400℉ for a few minutes until the cheese is soft. Note that the cheese will ooze out since it will have already been cut, which is why it's best to eat it at a gathering in one go.
