Upside Down Cake with Cherries

Heat the butter and dark brown sugar until melted.

Add the caramel to the pan, then place halved cherries into the pan cut side down.

Cream together the butter and sugars.

Beat in the whisked eggs and extracts.

Add the flour and leaveners and mix until mostly combined.

Fold in the almond flour until completely combined. Set aside.

Add the cake batter in a few dollops on top of the cherries and spread evenly to meet the edges.

Bake, cool for 5-10 minutes, run a knife around the edges, then flip the cake out onto a platter (use oven mitts!).
