Strawberry Crunch Cupcakes with Strawberry Filling

Beat the butter, sugar, and oil

Scrape the sides and add egg whites and vanilla.

Batter after adding the egg whites.

Add half of the whisked dry ingredients.

Add half of the wet ingredients.

Finished vanilla cupcake batter.

Fill each cupcake liner ⅔ full.

Baked vanilla cupcakes.

Add the crushed cookies, sugar, freeze dried strawberries and melted butter and mix to combine.

Whip together cream cheese, powdered sugar, vanilla, and heat cream until light and spreadable.

Create a hole in the center of each cupcake.

Fill each hole with strawberry jam.

Pipe on the whipped cream cheese frosting.

Add the strawberry crunch topping.

Cut open to reveal the surprise!
