Raspberry Swirl Cheesecake Bars with White Chocolate

Mix together chocolate graham cracker crumbs, sugar, and melted butter.

Add the crumbs into a prepared 8x8" pan.

Compact it down tightly, getting the corners, then bake for 8 minutes.

Beat together the cream cheese and sugar.

Scrape down the sides.

Add the sour cream and mix on low to combine.

Pour in the melted white chocolate and mix one more time.

Pour the cheesecake batter on top of the chocolate crust.

Cook down raspberries, pass them through a sieve, then drizzle the puree onto the cheesecake layer.

Use a butter knife to swirl the raspberry puree into a nice pattern.

Add fresh raspberries to the top, then bake until set.

Cool completely in the fridge, then slice and enjoy!
