Pumpkin Streusel Coffee Cake

Oats

Mix together the ingredients for the streusel topping (with a fork) until medium and small crumbles form.

Whisk together the dry ingredients in a medium bowl.

Cream together the butter, sugars, oil and eggs, then add the pumpkin puree and sour cream.

Add the dry ingredients and mix on low speed until just combined. Fold in any extra flour with a rubber spatula.

Pour the batter into the prepared pan (lined with parchment paper) and spread it evenly.

Spread the crumb topping evenly over the cake batter then gently press down all over to compact it a bit, then bake.
