Pistachio Muffins with Pudding Mix 

Whisk together the dry ingredients.

Whisk the sugar, eggs, oil, butter, and extracts.

Add in the sour cream and milk.

Whisk to combine.

Pour the dry ingredients into the wet.

Fold gently, scraping to the bottom each time.

Fill each muffin opening to the top.

Sprinkle on crushed pistachios and coarse sugar, then bake.
