Individual Biscoff Cheesecakes

Pulverize Biscoff cookies, then mix with butter and sugar.

Add to cupcake liners in a muffin tin.

Use the bottom of a glass to compact the crust, then bake.

Cream together cream cheese and Biscoff spread, then add eggs.

Mix to combine, then add sour cream.

Fold the mixture by hand until very smooth.

Add to the tops of the Biscoff cookie crust, then bake.

Top with melted cookie butter, and fresh whipped cream.
