Gooey S'mores Bars

Bake the crust in a preheated 350℉ oven for 10 minutes, then remove to a wire rack to cool.

Make the ganache then add to the graham cracker crust. Refrigerate to set.

Start by adding the brown sugar, corn syrup, salt, and half of the water to a saucepan over medium heat. Bring the mixture to 240℉.

Turn the mixer to the highest speed and mix for 10 minutes. The marshmallow will go from runny, to a more  soft fluff and then a more firm consistency.

Grease a knife with neutral oil (canola or vegetable). Rinse, dry, and re-grease the blade in between each slice.

Cut the bars into 16 squares.

Torch the marshmallow layer of each piece to the desired color.
