Gooey Homemade S'mores Bars

Combine graham cracker crumbs, butter, and sugar and press into a square pan and bake to set.

Combine hot heavy cream and chocolate to create a ganache.

Pour the chocolate ganache over the pre-baked crust and spread evenly.

Combine brown sugar, corn syrup and water and bring to a boil.

Cook until it reaches 240℉

Slowly stream the sugar syrup into powdered gelatin and water and mix with a stand mixer until thick and fluffy.

Take the finished marshmallow and pour it over the set ganache layer and spread evenly.

Grease a sharp knife to cut the bars with ease.

Cut the bars into 9 or 16 pieces.

Use a kitchen torch to toast the marshmallow, then bite in!!
