Cast Iron Skillet Pizza

Mix together all ingredients for the dough until completely moistened. Cover and rest for 5 minutes.

Scoop up the dough underneath, pull and wiggle upwards.

Fold the dough on top of itself, then turn the bowl a quarter turn and repeat three more times (turning each time). Cover and rest for another five minutes.

Repeat the stretch and fold process two more times (a total of 12 stretch and folds).

Drizzle the dough in olive oil, cover, and rise until doubled in size.

Coat the bottom of a cast iron pan with olive oil.

Add the risen dough and gently spread it out with your fingers.

Cover the top with olive oil so it doesn't dry out. Rest again until puffy and jiggly (30 minutes to 1 hour).

Press your fingers down and repeat all over the dough.

Par bake the dough in a preheated 450℉ oven for 20 minutes.

Spread on the pizza sauce.

Cover completely with shredded mozzarella cheese (the whole way to the edges).

Add additional desired toppings, and continue baking for 10 more minutes.

Use a spatula to remove the pizza from the cast iron skillet before slicing and serving.
